Polars 2.0: streaming engine by default, out-of-core spilling at 80% RAM, new Map dtype, faster than DuckDB on all but one benchmark

collect() now defaults to the streaming engine and does not preserve row order for join and group_by without maintain_order=True. Out-of-core is on by default with a 64 GB disk budget; a new Map dtype maps Arrow MapType directly.
